- 14 oz Firm tofu
- 4 cups Bok choy
- 4 Garlic cloves
- 2 tbsp Vegetable oil
- 2 tbsp Low-sodium soy sauce (gluten-free)
- 1 tsp Sesame oil
- 1/4 tsp Red pepper flakes
- 2 Green onions
- Drain the tofu and press to remove excess moisture, then cut into 1-inch cubes.
- Wash and chop the bok choy into bite-sized pieces, separating stems and leaves if desired.
- Minced garlic cloves finely.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add tofu cubes and stir-fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same wok, add remaining oil, then sauté garlic until fragrant, about 30 seconds.
- Add bok choy stems first, stir-fry for 2 minutes, then add leaves, soy sauce, sesame oil, and red pepper flakes. Cook until bok choy is tender, about 3-4 minutes.
- Return tofu to the wok, toss to combine, cook for another 2 minutes to heat through. Garnish with chopped green onions before serving.
