  • 1 tbsp kosher salt
  • 1 tbsp coarse black pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • 1/2 tsp cayenne
  • 2 tbsp red wine vinegar
  • 1 tbsp neutral oil
  1. Trim the silverskin off the top but leave a 1/4-inch fat cap on the underside.
  2. Mix the salt, pepper, garlic and onion powder, crumbled rosemary and cayenne, coat the roast on all sides and leave it at room temperature 45 minutes.
  3. Smoke fat side up at 225°F over red oak until the thickest part reads 118°F, about 75 minutes.
  4. Rest the roast 10 minutes while a grill or cast-iron skillet gets to 500°F.
  5. Sear 2 minutes a side until a hard crust forms, pulling at 130°F for medium rare.
  6. Rest 10 minutes, then find the line where the grain changes direction, cut the roast in two along it, and slice each half thinly across its own grain; finish with the vinegar whisked into the oil.

  • 1 tbsp smoked paprika

  • 1 tsp celery salt
  • 1 tbsp Worcestershire sauce
  1. Bring 2 quarts of water to a boil with the kosher salt, curing salt, brown sugar, peppercorns, bay leaves and smashed garlic, stir until dissolved, then add 2 quarts of ice to drop it below 40°F.
  2. Submerge the legs, weight them under a plate and cure in the fridge for 24 hours — the curing salt is what gives the ham-pink color and the fairground flavor, and without it these are just smoked turkey.
  3. Rinse the legs thoroughly, pat dry and rest uncovered on a rack for 1 hour so the skin dries.
  4. Rub with the onion powder, paprika and celery salt.
  5. Smoke at 275°F over hickory for about 3 hours 30 minutes, to 175°F at the thickest part of the drum.
  6. Melt the butter with the Worcestershire and brush the legs twice during the last 30 minutes.
  7. Rest 15 minutes before serving; they hold a lot of heat and will burn a mouth straight off the smoker.

  3. Slide a finger under the skin to loosen it and work half the butter underneath, then season the outside with the remaining seasoning, salt and pepper.
  4. Smoke at 275°F over pecan for 90 minutes, until the skin is bronzed and taut.
  5. Move the wings into a foil pan on a bed of sliced onion and celery, pour in the stock and cover tightly.
  6. Cook 60-75 minutes more until the meat pulls back from the bone and reads 185-190°F — turkey wings are all connective tissue and need the extra time.
  7. Brush with the remaining butter, uncover for the last 10 minutes to firm the skin, and finish with the scallions and a squeeze of lemon.

  4. Meanwhile simmer the ketchup, molasses, brown sugar, vinegar, tomato paste and mustard powder over low heat for 10 minutes until the glaze coats a spoon.
  5. Brush the heads twice during the last 20 minutes, letting the glaze tack up between coats rather than pooling.
  6. Rest 10 minutes and cut into thick wedges straight down through the stem so each wedge holds together on the plate.

  3. Heat the oil in a large skillet over medium-high. Lay the thighs in without crowding and leave them alone for 5 minutes, until the underside is mahogany and the meat releases from the pan on its own. Flip, give it 3 more minutes, then move them to a plate.
  4. Drop 2 tablespoons of butter into the same skillet and add the sliced onions with a pinch of salt. Cook over medium 10 to 12 minutes, scraping the browned bits off the bottom as the onions release moisture, until they are limp and deeply golden. Stir in the garlic for the last minute.
  5. Sprinkle the flour over the onions and stir constantly for 90 seconds so it toasts and loses its raw smell. Pour in the broth a little at a time, whisking each addition smooth before adding more, then stir in the cream.
  6. Return the thighs and any juices to the pan, nestling them down into the gravy. Simmer uncovered on low for 12 to 15 minutes, until the gravy thickly coats a spoon and the chicken reads 175F at the center.
