Ingredients

scaled from 4 servings
  • 7 oz smoked deli turkey, thick cut
  • 1, sliced thin crisp apples
  • 3/4 cup sharp cheddar, cubed
  • 1/2 cup pecan halves
  • 5 oz, chopped romaine and leaf lettuce
  • 1/4 cup dried cranberries
  • 1/4 cup olive oil
  • 1 tbsp cider vinegar
  • 1/2 tbsp honey
  • 4 thick slices crusty bread
  • 1 tsp each salt and coarse black pepper

Method (tap to check — screen stays awake)

  1. Toast the pecans in a dry skillet over medium heat for 4 minutes until they smell nutty and darken slightly, then cool them.
  2. Whisk the oil, vinegar, honey, salt and pepper until the dressing thickens and stops separating on the whisk.
  3. Cut the turkey into thick batons rather than shreds so it stands up in the salad.
  4. Toss the lettuce with about half the dressing until every leaf is barely coated.
  5. Pile on the turkey, apple, cheddar, cranberries and pecans, then drizzle the rest of the dressing over the top.
  6. Serve with thick slices of bread toasted until the edges are crisp.
