  • 1/4 cup all-purpose flour
  • 1/4 cup fine cornmeal
  • 1/2 cup buttermilk
  • 2 brioche buns
  • 1 tbsp butter

  • 1 tsp Old Bay seasoning
  • 1/4 tsp cayenne pepper
  • 2 leaves butter lettuce
  • 1 beefsteak tomato
  • 1/4 cup neutral frying oil

  1. Ask the fishmonger to clean the crabs; if they arrive whole, snip off the face behind the eyes, lift each side of the top shell and pull out the feathery gills, then remove the apron underneath.
