  1. Soak the panko in 1/4 cup water for 5 minutes until it turns to a paste; this is what keeps lean turkey meatballs from drying out.
  2. Mix it with the turkey, egg, half the Parmesan, half the onion, the oregano, and salt, handling it just until combined, then roll 16 balls.
  3. Brown the meatballs in the oil in a wide skillet over medium, 6 minutes total, turning to color three or four sides; they will not be cooked through yet.
  4. Move them out, add the rest of the onion and the garlic, and cook 2 minutes until soft and fragrant.
  5. Pour in the crushed tomatoes with the pepper flakes, bring to a simmer, and cook 8 minutes until the sauce darkens and thickens.
  6. Nestle the meatballs back in, cover, and simmer 10 minutes until they are firm and read 165F at the center.

  • 2 lb russet potatoes
  • 5 tbsp salted butter
  • 1/4 cup heavy cream
  • 3 garlic cloves
  • 1 tsp dried thyme
  • 1 tsp black pepper
  1. Heat the oven to 375F and line a sheet pan with parchment. Soak the panko in the milk for 5 minutes until it turns to a paste; this is what keeps lean turkey from baking into a brick.
  2. Grate the onion on the large holes of a box grater, or chop it very fine and soften it in a skillet for 5 minutes. Raw chunks of onion never fully cook inside a loaf.
  3. Mix the turkey, soaked panko, onion, eggs, minced garlic, thyme, Worcestershire, 2 tablespoons of the ketchup, 2 teaspoons of salt, and the pepper with your hands. Stop the moment it looks combined. Overworking makes it rubbery.
  4. Shape the mixture on the sheet pan into a free-form loaf about 9 by 5 inches. Baking it free-form instead of in a pan lets the sides brown and the fat run off.
  5. Stir the remaining ketchup with the brown sugar and brush half of it over the loaf. Bake 35 minutes, brush on the rest, and bake 15 to 20 minutes more, until the glaze is dark and sticky and the center reads 165F.
  6. Meanwhile, cut the potatoes into 2-inch chunks, start them in cold salted water, and boil 15 to 18 minutes until a chunk falls off a knife on its own.
  7. Drain and return the potatoes to the dry hot pot for 30 seconds to steam off surface water, then mash with the butter and the warmed cream. Season aggressively with salt.
  8. Rest the meatloaf 10 minutes before slicing, or it will crumble. Cut thick slices and serve over the potatoes.

  5. Fold in the broccoli and half the scallions, then mound the filling back into the shells.
  6. Top with the remaining cheddar and bake 15 minutes at 425F until the tops are browned and the filling is steaming.

  1. Soften the finely diced onion in 2 tbsp of the oil 5 minutes, add the sliced garlic for 1 minute, then the tomatoes, 1 tsp salt and the butter. Simmer 20 minutes, tearing in the basil at the end.
  2. Pound the cutlets to 1/4 inch — veal is thin and cooks fast, and that is the point of the dish. Season both sides.
  3. Coat each cutlet in flour, then egg, then breadcrumbs mixed with half the Pecorino.
  4. Fry in the remaining oil over medium-high, 2 minutes a side, until golden. Drain on a rack, never on paper flat, or the underside softens.
  5. Heat the broiler. Arrange the cutlets on a sheet pan, spoon over a little sauce, blanket with mozzarella and the rest of the Pecorino, and broil 3 to 4 minutes until the cheese blisters. Veal is safe at 145F with a 3-minute rest, and pounded thin it is well past that after frying.
  6. Boil the spaghetti in heavily salted water to al dente, toss it with the remaining sauce, and serve the cutlets on top.
