Ingredients

scaled from 4 servings
  • 1 lb ground turkey, 85/15
  • 3/4 cup panko breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan
  • 1 1/2 cups marinara sauce
  • 1 1/4 cups shredded mozzarella
  • 3/4 tbsp olive oil
  • 2 cloves garlic
  • to taste dried oregano, salt, pepper

Method (tap to check — screen stays awake)

  1. Heat the oven to 425°F.
  2. Mix the turkey, panko, egg, Parmesan, minced garlic, oregano, salt and pepper with your hands until just combined; overworking makes the meatballs dense.
  3. Roll into 16 meatballs and set them in an oiled baking dish, spaced so they brown rather than steam.
  4. Roast 12 minutes, until the tops are browned and the meatballs feel firm when nudged.
  5. Spoon the marinara around and over them, then scatter the mozzarella across the top.
  6. Return to the oven 10 to 12 minutes, until the sauce bubbles at the edges and the cheese is melted with brown spots.
  7. Check that a meatball reads 165°F at the center, then rest 5 minutes before serving.
