  • 3 cups steamed short-grain rice
  • 1 block firm tofu, cubed
  • 4 cups spinach
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 2 cups bean sprouts
  • 1 cup shiitake mushrooms, sliced
  • 4 tbsp gochujang
  • 3 tbsp toasted sesame oil
  • 2 tbsp soy sauce
  1. Pan-fry the tofu cubes in a little oil 8 minutes until golden on all sides, then toss with soy sauce.
  2. Blanch spinach and bean sprouts 1 minute each, squeeze dry, and season with sesame oil and salt.
  3. Saute carrot, zucchini, and shiitake separately 3 minutes each.
  4. Divide rice among bowls and arrange tofu and vegetables in colorful sections.
  5. Add a spoon of gochujang thinned with sesame oil to each bowl.
  6. Mix thoroughly at the table before eating.

  1. Fry sliced onions in ghee 10 minutes until golden; reserve half.

  3. Parboil soaked basmati in salted water 5 minutes to 70% done and drain; steep saffron in warm milk.

Vegetable Fried Rice With Crispy Tofu And Cashews

  • 6 cups cooked and chilled long-grain white rice
  • 14 oz extra-firm tofu
  • 6 large eggs
  • 3/4 cup roasted salted cashews
  • 3 tbsp vegetable oil
  • 2 tbsp toasted sesame oil
  • 1/4 cup soy sauce
  • 2 cups frozen peas and carrots
  • 1 yellow onion
  • 5 scallions
  • 4 garlic cloves
  • 1 tbsp grated fresh ginger
  • 1 tsp black pepper
  1. Press the tofu: wrap the block in paper towels, set a heavy pan on top, and leave it 10 minutes. Squeezing the water out is what lets it brown instead of steam. Cut it into three-quarter-inch cubes.
  2. Break up the cold rice with your fingers until there are no clumps left. Day-old refrigerated rice is essential here; fresh warm rice turns to paste in the pan.
  3. Heat 2 tablespoons of the vegetable oil in a large skillet or wok over high heat until it just begins to smoke. Add the tofu in one layer and leave it alone for 3 minutes, until the bottoms are golden and release from the pan, then turn and brown a second side. Scoop it out.
  4. Beat the eggs with a pinch of salt, pour them into the hot pan, and scramble quickly for 45 seconds until barely set. Slide them out onto the tofu plate.
  5. Add the last tablespoon of oil with the diced onion and cook 3 minutes over high heat, then add the garlic, ginger, and the frozen peas and carrots straight from the bag. Stir-fry 2 minutes until the vegetables are hot and any ice has cooked off.
  6. Add the rice and press it flat against the pan. Let it sit undisturbed for 2 minutes so the grains on the bottom toast and pop, then toss and repeat once more.
  7. Pour the soy sauce around the edge of the pan rather than over the middle, so it sizzles and caramelizes on contact. Toss until the rice is evenly light brown.
  8. Fold the tofu, eggs, cashews, sesame oil, and most of the sliced scallions back in, toss 30 seconds to heat through, and finish with the rest of the scallions and black pepper.

  1. Cut tofu into 3/4-inch cubes and warm gently in salted water while you cook the sauce.
  2. Stir-fry the mushrooms in oil over medium-high heat for 5 minutes until browned and dry.
  3. Add doubanjiang, black beans, garlic, and ginger and fry 2 minutes until the oil turns red.
  4. Pour in the stock and bring to a simmer.

  2. Rinse lentils under cold water. In a pot, combine lentils with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 15 minutes until tender. Drain excess water.
  3. While lentils cook, finely chop onion and garlic. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
  4. Add tomato puree, garam masala, turmeric, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Add chopped spinach to the skillet and cook until wilted, about 2 minutes. Stir in cooked lentils and cook for another 2 minutes to combine flavors.
  6. Stuff each bell pepper with the lentil-spinach mixture. Place stuffed peppers in a baking dish.
  7. Drizzle with a little olive oil and cover with foil. Bake for 25-30 minutes until peppers are tender.
  8. Remove from oven, squeeze fresh lemon juice over the peppers, and serve warm.
