- 3/4 lb turkey breast cutlets
- 1 10 oz box herb stuffing mix
- 1 cup chicken broth
- 3 1/2 tbsp butter
- 1/4 cup heavy cream
- 1 ribs, diced celery
- 1, diced yellow onion
- 1 1/2 tbsp all-purpose flour
- 6 oz green beans
- 1 tsp each poultry seasoning, salt and pepper

- Melt half the butter in a large skillet, cook the celery and onion 4 minutes until soft, then stir in the stuffing mix and 1 1/2 cups of the hot broth. Cover off the heat for 5 minutes so it steams and swells, and tip it into a bowl.
- Season the cutlets with poultry seasoning, salt and pepper and sear them in the same pan in the remaining butter, 3 minutes a side, until golden and just cooked through. Move them to a plate.
- Scatter the flour into the pan drippings, cook 1 minute, then whisk in the rest of the broth and the cream and simmer 3 minutes until the gravy coats a spoon.
- Boil the green beans 4 minutes. Return the stuffing and turkey to the skillet, spoon the gravy over everything, and serve straight from the pan.
