- 4 (6 oz each) cod fillets
- 1 thinly sliced zucchini
- 1 cup halved cherry tomatoes
- 1 julienned leek
- 1 sliced lemon
- 4 tbsp dry white wine
- 2 tbsp extra-virgin olive oil
- 4 sprigs fresh thyme
- Heat the oven to 400F and cut four large squares of parchment paper.
- Divide the zucchini, leek, and tomatoes among the squares and drizzle with olive oil.
- Set a seasoned cod fillet on each bed, top with lemon slices, thyme, and a tablespoon of wine.
- Fold and crimp the parchment into sealed packets so the steam stays trapped.
- Bake for 12 to 15 minutes until the fish flakes, then open the packets at the table.
