  • 1.5 lb portobello mushroom caps
  • 3 poblano peppers
  • 1 red bell pepper
  • 1 large red onion
  • 2 lime
  • 3 garlic cloves
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 3 tbsp olive oil
  • 8 flour tortillas
  • 15 oz can black beans, drained
  • 1/2 cup Mexican crema
  1. Scrape the dark gills from the portobellos with a spoon — they turn the whole pan grey-brown — and slice the caps 1/2 inch thick. Cut the peppers and onion into strips of the same width.
  2. Toss the mushrooms and vegetables with the oil, chili powder, cumin, paprika, grated garlic, the juice of one lime and 1 tsp salt.
  3. Heat a cast-iron skillet over high until a drop of water skitters. Cook the mushrooms alone in a single layer, undisturbed, 4 minutes, then stir and cook 3 minutes more until they have released their water and browned. Set aside.
  4. Add the peppers and onion to the same pan and cook 7 to 8 minutes, tossing only every couple of minutes, until charred in places and still with some snap.
  5. Return the mushrooms, add the beans, and heat through 2 minutes. Squeeze over the second lime.
  6. Warm the tortillas directly over a gas flame or in a dry pan 20 seconds a side, and serve the sizzling pan with crema alongside.

  • 3 lb beef chuck roast
  • 1 small head, cut in wedges green cabbage

  • 5 tbsp unsalted butter
  • 2 tbsp tomato paste
  • 6 cloves, smashed garlic
  • 2 tbsp olive oil
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp kosher salt
  • 1 1/2 tsp black pepper
  1. Heat the oven to 300F. Dry the chuck roast thoroughly and season it all over. Sear it in the olive oil in a dutch oven over high heat, 5 minutes a side, until each face is properly browned and crusted rather than grey.
  2. Lift the roast out, add the onions and carrots to the pot and cook 5 minutes until the onion edges char. Stir in the tomato paste and garlic for 1 minute, until the paste darkens from red to brick.
  3. Pour in the broth, scrape the bottom clean, add the thyme and bay leaves and return the roast. Cover and cook in the oven for 3 hours, until a fork twists in the center with no resistance at all.
  4. Add the cabbage wedges to the pot for the last 30 minutes so they braise in the liquid without falling apart.
  5. Rest the meat 15 minutes, then pull it into large pieces. Skim the fat from the braising liquid, whisk in the butter, and spoon it over the beef and vegetables.

  1. Heat the oven to 350F and butter a 9x13 baking dish. Whisk the flour, baking powder, and 1 1/2 teaspoons of the pumpkin pie spice together.
  2. Beat the egg yolks with 3/4 cup of the granulated sugar until pale and thick, about 3 minutes. Beat in the pumpkin puree and 1 teaspoon of the vanilla, then fold in the dry ingredients.
  3. In a clean bowl, whip the egg whites with the remaining 1/4 cup sugar to soft peaks, and fold them into the batter in three additions — the open sponge is what lets the cake drink the milks later.
  4. Spread into the dish and bake 28 to 32 minutes, until the top springs back when pressed. Cool 30 minutes, then poke the whole surface deeply with a skewer or fork — be thorough, every hole is a milk delivery channel.
  5. Whisk the evaporated milk, condensed milk, whole milk, 1/2 cup of the heavy cream, and the remaining 1 teaspoon pumpkin pie spice. Pour slowly over the whole cake, letting each pass absorb before the next.
  6. Cover and refrigerate at least 4 hours, preferably overnight — the soak is not optional; it's the recipe.
  7. Before serving, whip the remaining 1 1/2 cups heavy cream with the powdered sugar and remaining 1 teaspoon vanilla to medium peaks. Spread over the cold cake and dust with the cinnamon.

  2. Add the poblanos and onion, both cut in thin strips, and cook 6 minutes until they slump and take color at the edges. Add the sliced garlic and oregano for the last minute, then scrape the vegetables out with the chorizo.
  3. Wipe the skillet, then pack in the Oaxaca and Jack cheeses and bake 8 to 10 minutes, just until melted and beginning to bubble at the rim. Take it out before the surface browns — past that point the cheese breaks and weeps oil.
  4. Scatter the chorizo and peppers over the molten cheese and return to the oven for 2 minutes.
  5. Warm the tortillas in a dry pan 20 seconds a side while the skillet rests.
  6. Finish with cilantro and a squeeze of lime and serve straight from the pan, scooping cheese into tortillas at the table.
