- 1/2 tbsp kosher salt
- 1 tsp coarse black pepper
- 1/2 tsp smoked flaky sea salt
- 1 1/2 tbsp unsalted butter
- 2 garlic cloves, smashed
- 2 sprigs fresh thyme
- 1/2 tbsp neutral oil

- Salt the steak on all sides, including the edges, and set it on a rack over a tray. Refrigerate uncovered at least 4 hours and up to 2 days — this dries the surface and seasons through. Bring it out 45 minutes before cooking.
