Ingredients

scaled from 4 servings
  • 1/2 lb deli roast beef, rare
  • 2 kaiser rolls
  • 4 slices sharp cheddar
  • 3 tbsp mayonnaise
  • 1 1/2 tbsp prepared horseradish
  • 2 leaves green leaf lettuce
  • 1 large, sliced tomato
  • 1, sliced paper thin red onion
  • 2 oz kettle potato chips
  • 1 tsp each salt and coarse black pepper

Method (tap to check — screen stays awake)

  1. Stir the mayonnaise with the horseradish, a pinch of salt and plenty of coarse pepper, then let it sit 5 minutes so the heat blooms.
  2. Split and toast the kaiser rolls cut side down in a dry skillet for 2 minutes until the surface is golden and dry.
  3. Spread the horseradish mayo on both cut faces, right to the edges.
  4. Ruffle the roast beef as you lay it on so the sandwich stays tall and loose rather than pressed into a slab.
  5. Add cheddar, lettuce, tomato and shaved onion, then salt the tomato directly.
  6. Close, press gently, cut in half, and serve with the chips.
