- 1 (8 oz) can tomato sauce
- 3/4 cup chicken broth
- 1/4 cup pimento-stuffed green olives
- 1 bay leaves

- The night before, stir together the house annatto sazón-citrus rub: 12 mashed garlic cloves, oregano, annatto, cumin, coriander, 2 tablespoons salt, the juice of the oranges and limes, the vinegar, and the olive oil. Reserve 1 tablespoon of the wet rub for the rice.
- Cut deep slits all over the pork (under the skin flap too, keeping the skin attached), work the rub into every slit and surface, and marinate skin-side up, uncovered in the fridge, at least 12 hours.

- Rest the pernil 30 minutes, tented loosely so the skin stays crisp.
- While the pork rests, make the rice: sauté the diced onion, diced bell pepper, and the chopped cilantro stems in a heavy pot 5 minutes to build a quick sofrito.
- Stir in the tomato sauce, the reserved tablespoon of rub, the drained gandules, olives, and bay leaves; cook 2 minutes.
