Ingredients

scaled from 4 servings
  • 6 burrito size large flour tortillas
  • 2 oz sliced pepperoni
  • 1 1/4 cups mozzarella, shredded
  • 3/4 cup marinara sauce
  • 1/4 cup grated parmesan
  • 1, diced small green bell pepper
  • 3/4 tbsp butter
  • 1 tsp each dried oregano and garlic powder

Method (tap to check — screen stays awake)

  1. Warm the marinara in a small saucepan with the oregano and garlic powder over low heat while you build, so there is a hot dip waiting at the end.
  2. Cover half of each tortilla with mozzarella, pepperoni, diced pepper and a little parmesan, then fold the bare half over and press down.
  3. Melt a knob of butter in a dry skillet over medium and griddle the folded quesadillas two at a time, 2 to 3 minutes a side, until the tortilla is freckled brown and the cheese has fully surrendered.
  4. Let each one sit for a minute so the cheese sets, cut into wedges, and serve with the warm marinara for dipping.
