- 4 (6 oz each) red snapper fillets, skin on
- 4 tbsp, softened unsalted butter
- 1 orange
- 1 lime
- 1 clove garlic
- 2 tbsp chopped cilantro
- 1 tbsp olive oil
- 1 pinch cayenne pepper
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Set an oven rack about 6 inches below the element and preheat the broiler on high for a full 5 minutes.
- Mash the softened butter with the zest of the orange and lime, a teaspoon of each juice, the grated garlic, the cayenne and half the cilantro, then chill it while the broiler heats.
- Pat the fillets dry, rub them with the olive oil and season both sides with the salt and pepper.
- Lay them skin-side down on a foil-lined sheet pan, spaced apart so they broil rather than steam.
- Broil 7 to 9 minutes without turning — thin fillets do not need flipping — until the tops are lightly blistered, the flesh is opaque throughout and a thermometer reads 145°F.
- Put a spoonful of the citrus butter on each hot fillet, let it melt for a minute and finish with the remaining cilantro and the juice of the lime.
