  • 1/4 cup brown sugar
  • 1 tbsp honey
  • 3/4 tbsp Dijon mustard
  • 1 lb russet potatoes
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 3/4 cup shredded sharp cheddar
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 small yellow onion

  1. Heat the oven to 350°F and butter a 9x13 baking dish.
  2. Melt the butter in a saucepan, cook the onion 4 minutes, whisk in the flour, and cook 1 minute until it smells toasty.
  3. Whisk in the milk and cream and simmer, stirring, until the sauce thickens enough to coat the back of a spoon, 4 minutes; season with nutmeg, salt and pepper.
  4. Slice the potatoes 1/8 inch thick, layer them in the dish with three-quarters of the cheddar, and pour the sauce over so it settles between the layers.
  5. Cover with foil and bake 40 minutes, then uncover, add the remaining cheese, and bake 20 minutes until a knife meets no resistance and the top is browned.
  6. Set the ham cut side down in a roasting pan with 1/2 cup water, tent with foil, and warm in the same oven for 45 minutes.
  7. Simmer the brown sugar, honey and mustard together for 2 minutes, then brush over the ham and roast uncovered 12 minutes until the glaze is lacquered and bubbling.
  8. Rest the ham 10 minutes, then pull the slices apart and serve with the potatoes.
