Ingredients

scaled from 4 servings
  • 4 (6 oz each) red snapper fillets, skin on
  • 2 tbsp, softened unsalted butter
  • 1 orange
  • 1 lime
  • 1 clove garlic
  • 2 tbsp chopped cilantro
  • 1/2 tbsp olive oil
  • 1 pinch cayenne pepper
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method (tap to check — screen stays awake)

  1. Set an oven rack about 6 inches below the element and preheat the broiler on high for a full 5 minutes.
  2. Mash the softened butter with the zest of the orange and lime, a teaspoon of each juice, the grated garlic, the cayenne and half the cilantro, then chill it while the broiler heats.
  3. Pat the fillets dry, rub them with the olive oil and season both sides with the salt and pepper.
  4. Lay them skin-side down on a foil-lined sheet pan, spaced apart so they broil rather than steam.
  5. Broil 7 to 9 minutes without turning — thin fillets do not need flipping — until the tops are lightly blistered, the flesh is opaque throughout and a thermometer reads 145°F.
  6. Put a spoonful of the citrus butter on each hot fillet, let it melt for a minute and finish with the remaining cilantro and the juice of the lime.
