- 1 can (14 oz) coconut milk
- 1/2 cup chicken broth or water
- 3/4 lb boneless chicken thighs, sliced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup snap peas
- 1/2 tbsp brown sugar
- 1/2 tbsp fish sauce
- 1 lime, juiced
- 1/4 cup Thai basil or cilantro
- 1 1/2 cups jasmine rice, cooked
