  • 4 slices thick-cut bacon
  • 4, hard-boiled and halved eggs
  • 2 oz blue cheese crumbles
  • 1, sliced avocado
  • 1 hearts, chopped romaine lettuce
  • 1/2 cup, halved cherry tomatoes
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp dijon mustard
  • 3/4 tsp kosher salt
  • 1/2 tsp coarse black pepper

  1. Cook the bacon in a skillet over medium heat for 9 minutes, until it is stiff and deep brown, then drain it on paper towels and chop.
