  • 2 large heads, cut into florets cauliflower
  • 4 eggs
  • 4 oz, shredded sharp cheddar
  • 2 oz cream cheese
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 3 tbsp unsalted butter
  • 3, thinly sliced scallions
  • 2 cloves, minced garlic
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

  1. Steam the cauliflower 10 to 12 minutes, until a fork mashes a floret against the side of the pot with no effort. Drain it and let it steam dry for 2 minutes so the mash is not soupy.
  2. Mash the hot cauliflower with 4 tablespoons of the butter, the cream cheese, heavy cream, garlic, salt and pepper until it is thick and lumpy like a rustic potato mash.
  3. Fold in most of the cheddar and the sour cream, then keep it over low heat, stirring, until the cheese has fully melted through.
  4. Fry the eggs two at a time in the remaining butter over medium heat, 3 minutes, until the whites are set and lacy at the edges but the yolks still wobble.
  5. Spoon the loaded cauliflower into bowls, top each with two fried eggs, and finish with the rest of the cheddar and the scallions.
