Ingredients

scaled from 4 servings
  • 14 oz (8 slices) thick-sliced bologna
  • 4 slices white sandwich bread
  • 4 slices American cheese
  • 1 1/2 tbsp yellow mustard
  • 1 1/2 tbsp mayonnaise
  • 1 tbsp unsalted butter
  • 1, sliced thin yellow onion
  • 1/4 cup dill pickle chips
  • 1/2 tsp black pepper

Method (tap to check — screen stays awake)

  1. Cut two shallow slits from the edge to the center of each bologna slice so it fries flat instead of doming into a bowl.
  2. Melt the butter in a skillet and fry the bologna over medium-high heat for 2 minutes per side until the edges are brown and frilled.
  3. Push the bologna aside, add the onion, and cook 4 minutes until limp and browned at the edges.
  4. Lay cheese on the hot bologna in the pan and cover for 30 seconds until it slumps and melts.
  5. Toast the bread, spread with mustard and mayonnaise, and stack two slices of bologna per sandwich.
  6. Finish with the onions, pickle chips and a grind of pepper, and press the sandwich flat before cutting.
