  • 2 burrito-size flour tortillas (12-inch)
  • 3/4 lb russet potatoes, cut in 1/2-inch dice
  • 4 oz sharp cheddar, shredded
  • 1 1/4 tbsp vegetable oil
  • 2 tsp butter
  • 1/4 cup sour cream
  • 1/2 cup jarred salsa
  • 2 scallions, sliced
  • 3/4 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
