Ingredients
- 3/4 lb cod fillets, cut in chunks
- 2 medium, diced russet potatoes
- 1 large, diced yellow onion
- 2 ribs, diced celery
- 1 1/4 cups whole milk
- 1/2 cup heavy cream
- 2 1/2 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1 cup chicken broth
- 1 1/2 cups oyster crackers

Method (tap to check — screen stays awake)
- Melt the butter and cook the onion and celery for 6 minutes until soft and translucent but not browned.
- Stir in the flour and cook 1 minute, then whisk in the broth until smooth with no lumps.
- Add the potatoes, bay and thyme and simmer 12 minutes until a knife slips into a cube with no resistance.
- Pour in the milk and cream and bring it back to a bare simmer; do not let it boil or it will break.
- Slide in the cod and poach gently for 5 minutes until the chunks turn opaque and flake at a nudge.
- Season with salt and white pepper, then ladle over a handful of oyster crackers in each bowl.
