Ingredients

scaled from 4 servings
  • 3/4 lb Italian sausage links
  • 2 large hoagie rolls
  • 1, sliced green bell peppers
  • 1 large, sliced yellow onion
  • 1/2 tbsp olive oil
  • 1/4 cup marinara sauce
  • 2 slices provolone
  • 1 tsp each dried oregano and red pepper flakes

Method (tap to check — screen stays awake)

  1. Halve the sausages lengthwise so they lie flat, then sear them cut-side down in an oiled skillet over medium-high for 4 minutes until deeply browned.
  2. Flip the sausage, add the peppers and onion around it, and cook 8 minutes more, stirring the vegetables, until they collapse and pick up char and the sausage is cooked through.
  3. Stir in the marinara, oregano and pepper flakes and let it bubble 2 minutes so everything is glazed rather than swimming.
  4. Lay provolone in the split rolls, pile the sausage and peppers on top, and let the residual heat melt the cheese for a minute before serving.
