Ingredients

scaled from 4 servings
  • 3/4 lb frozen crinkle-cut fries
  • 1/2 lb lean ground beef
  • 1 1/2 cans (15 oz), drained canned kidney beans
  • 1/2 cup tomato sauce
  • 3/4 cup sharp cheddar, shredded
  • scant 1/2 cup sour cream
  • 1/4 cup pickled jalapenos
  • 1, diced yellow onion
  • 2, sliced scallions
  • 2 tsp each chili powder, cumin, smoked paprika and salt

Method (tap to check — screen stays awake)

  1. Heat the oven to 450F and spread the fries in a single layer on a large sheet pan - piled fries steam - then bake 20 minutes until crisp.
  2. Brown the beef with the onion in a skillet over medium-high for 7 minutes, letting it sit between stirs so the meat picks up dark colour.
  3. Add the chili powder, cumin, paprika and salt for 1 minute, then the tomato sauce and beans. Simmer 8 minutes until thick enough to sit on a fry without running off.
  4. Pile the hot fries on a platter, spoon the chili over, and scatter the cheddar so it melts against the heat. Finish with sour cream, jalapenos and scallions and eat immediately.
