  • 2 firm, cored and sliced thick apples
  • 4 cups cooked microwave white rice
  • 1 1/2 tbsp honey
  • 1/4 cup whole-grain mustard
  • 1 1/2 tbsp butter
  • 3/4 tbsp olive oil
  • 1, sliced yellow onion
  • 1/4 cup chicken broth
  • to taste fresh thyme, salt and pepper

  1. Whisk the honey and mustard together. Pat the chops dry, season hard with salt and pepper, and sear them in the oil over medium-high for 4 minutes a side until a brown crust forms and they release cleanly from the pan.
  2. Move the chops to a plate. Add the butter, apples and onion to the drippings and cook 6 minutes, stirring twice, until the apples take colour on the cut faces but still hold their shape.
  3. Pour in the broth and half the honey mustard, scrape the bottom of the pan, and let it bubble down 3 minutes into a glossy sauce.
  4. Slide the chops back in, spoon the sauce over, and cook 3 minutes more to 145F. Rest 3 minutes and serve over rice with the rest of the honey mustard on the side.
