  • 6 oz fresh green beans, trimmed
  • 2 cloves garlic, minced
  • 1/2 tbsp apple cider vinegar
  • 1 tsp each black pepper and kosher salt

  1. Heat oven to 425F and toss the sweet potato cubes with the olive oil, salt, and pepper on a sheet pan in a single layer.
  2. Roast 25 to 30 minutes, turning once at the halfway mark, until the edges are caramelized and a cube collapses when pressed.
  3. Add the green beans to the pan for the last 10 minutes so they blister but stay snappy.
  4. Meanwhile, pat the ham steaks dry and sear them in a dry skillet over medium-high heat, 3 minutes per side, until the surface is spotted deep brown.
