  4. Sear in 2 tbsp butter over medium-high heat for 2 to 3 minutes per side until golden and the centers read 165F; do not crowd the pan.
  5. Fold the cranberries, pecans, onion and remaining butter into the hot rice and let it sit 5 minutes so the cranberries plump.
