Ingredients
- 3/4 lb lean ground beef
- 4 slices rye bread
- 3 slices swiss cheese
- 1 large, sliced thin yellow onions
- 1 1/2 tbsp butter
- 5 1/2 oz frozen steak fries
- 1/4 cup thousand island dressing
- to taste salt, pepper and Worcestershire

- Heat the oven to 450F and get the steak fries in straight away - they need the full 20 minutes and everything else waits on them.
- Cook the onions in 1 tablespoon of the butter over medium in a large skillet for 10 minutes, stirring every couple of minutes, until they collapse to a fraction of their volume and turn jammy brown. Scrape them into a bowl.
- Shape the beef into four thin oval patties the size of your bread, season them hard, and sear 3 minutes a side in the same pan until well crusted.
- Butter the outside of every rye slice. Build each melt as swiss, patty, onions, swiss, and griddle 3 minutes a side over medium until the rye is dark and the cheese has bonded the layers together.
- Cut in half and serve with the steak fries and a dish of thousand island.
