Ingredients

scaled from 4 servings
  • 3/4 lb large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1 1/4 cups panko bread crumbs
  • 1 large eggs
  • 1 cup, for frying canola oil
  • 1 28 oz bag frozen steak fries
  • 1/4 cup cocktail sauce
  • 1, cut in wedges lemon
  • 2 tsp total kosher salt, paprika and black pepper

Method (tap to check — screen stays awake)

  1. Spread the steak fries on a sheet pan and roast at 450F for 25 minutes, flipping once, until the edges are blistered and crisp.
  2. Set up three shallow dishes: seasoned flour, beaten eggs, and panko mixed with paprika and salt.
  3. Pat the shrimp very dry, then coat each one in flour, egg and panko, pressing so the crumbs stick in a thick jacket.
  4. Heat the oil to 350F and fry the shrimp in batches for 2 minutes, turning once, until the coating is golden and the shrimp curl into loose C shapes.
  5. Drain on a rack and salt immediately so the seasoning sticks to the hot crust.
  6. Pile the shrimp and fries on a platter with cocktail sauce and lemon wedges for squeezing.
