- 2 1/4 cups cooked microwave brown rice
- 1 1/2 tbsp olive oil
- 3/4 cup plain Greek yogurt
- 2 cloves, grated garlic
- 1, juiced lemon
- 1/2 cup feta or sharp cheddar, crumbled
- 1 cup, halved cherry tomatoes
- 1, diced cucumber
- 2 tsp each smoked paprika, cumin and salt
- 1 tbsp tahini or mayonnaise
