- 3 1/2 oz Swiss cheese, shredded
- 5 oz cremini mushrooms, sliced
- 1 large yellow onion, sliced thin
- 2 tbsp butter
- 3/4 lb russet potatoes, cut in 1/2-inch dice
- 1 tbsp vegetable oil
- 1 tsp each sweet paprika, black pepper, kosher salt

- Parboil the diced potatoes 6 minutes in salted water, drain, and let them steam dry for 2 minutes.
- Heat the oil in a large skillet, add the potatoes and paprika, and fry 10 minutes, turning every few minutes, until the outsides are crusted and browned.

- Repeat for the remaining three omelets and serve with the home fries.
