Ingredients
- 6 oz, torn into chunks brioche or challah loaf
- 3 large eggs
- 1 cup whole milk
- 1/4 cup heavy cream
- 1/4 cup brown sugar
- 2 tbsp unsalted butter
- 6 oz breakfast sausage links
- 1 cup mixed berries
- 1/4 cup maple syrup
- 2 tsp total vanilla extract, cinnamon and salt
Method (tap to check — screen stays awake)
- Heat the oven to 350F and butter a 9x13 dish. Scatter the torn bread across it in an even layer.
- Whisk the eggs, milk, cream, half the brown sugar, the vanilla, cinnamon and a pinch of salt until no streaks of yolk remain, then pour it over the bread and press the chunks down so they drink it up.
- Melt the butter with the remaining brown sugar and spoon it over the top; it will set into a crackly lid as it bakes.
- Bake for 45 minutes, until the center is puffed and set and the top is deep gold. A knife slid into the middle should come out clean, not wet.
- While it bakes, brown the sausage links in a skillet over medium heat for 10 minutes, rolling them so they color all the way around.
- Let the casserole settle for 5 minutes, then cut into squares and serve with the sausage, the berries and the maple syrup.
