Ingredients

scaled from 4 servings
  • 6 oz, torn into chunks brioche or challah loaf
  • 3 large eggs
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1/4 cup brown sugar
  • 2 tbsp unsalted butter
  • 6 oz breakfast sausage links
  • 1 cup mixed berries
  • 1/4 cup maple syrup
  • 2 tsp total vanilla extract, cinnamon and salt

Method (tap to check — screen stays awake)

  1. Heat the oven to 350F and butter a 9x13 dish. Scatter the torn bread across it in an even layer.
  2. Whisk the eggs, milk, cream, half the brown sugar, the vanilla, cinnamon and a pinch of salt until no streaks of yolk remain, then pour it over the bread and press the chunks down so they drink it up.
  3. Melt the butter with the remaining brown sugar and spoon it over the top; it will set into a crackly lid as it bakes.
  4. Bake for 45 minutes, until the center is puffed and set and the top is deep gold. A knife slid into the middle should come out clean, not wet.
  5. While it bakes, brown the sausage links in a skillet over medium heat for 10 minutes, rolling them so they color all the way around.
  6. Let the casserole settle for 5 minutes, then cut into squares and serve with the sausage, the berries and the maple syrup.
