  • 8 thick slices white sandwich bread
  • 3 tbsp unsalted butter
  • 6 oz bulk breakfast sausage
  • 2, sliced thick firm apples
  • 1 1/4 tbsp light brown sugar
  • 2 tsp total salt, black pepper and cinnamon

  1. Form the sausage into eight thin patties and fry over medium heat for 3 minutes per side until browned with a crisp edge and no pink at the center.
  2. Pour off most of the fat, add the apples, brown sugar and cinnamon, and cook 6 minutes until the slices are glazed and tender at the edge but still hold their shape.
  3. Cut a 2-inch hole out of the middle of each slice of bread with a glass, saving the rounds.
  4. Melt butter in a skillet, lay in the bread, and crack an egg into each hole.
  5. Cook 3 minutes until the underside of the bread is golden and the white has just set, then flip carefully and give it 1 minute more for a soft yolk.
  6. Toast the cut-out rounds in the same butter and serve everything together, seasoned with salt and pepper.
