  • 3/4 lb ground beef, 80/20
  • 1 small yellow onion, grated
  • 2 cloves garlic, minced
  • 3/4 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • 3 pita or flatbread
  • 1/2 cup Greek yogurt
  • 1 lemon, juiced
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1/2 tsp kosher salt

Method (tap to check — screen stays awake)

  1. Mix beef with grated onion (squeeze out liquid first), garlic, spices, half the herbs, salt. Shape into 12 oblong koftas around skewers or just patties.
  2. Heat a heavy skillet (cast iron is great) over medium-high. Cook koftas 3 min per side until charred and cooked through.
  3. Mix yogurt + lemon juice + remaining herbs for a quick sauce.
  4. Warm pita. Wrap with kofta, yogurt sauce, cucumber, tomato.
