Ingredients
- 6 oz dried soba noodles
- 3/4 cup kombu dashi (vegan)
- 2 1/2 tbsp soy sauce
- 1 1/2 tbsp mirin
- 2 scallions
- 1 nori sheets
- 1/2 tsp wasabi paste

- Simmer kombu dashi, soy sauce and mirin 3 minutes to make tsuyu, then chill in the fridge.
- Boil soba in plenty of water 4-5 minutes per package until just tender.
- Drain and rinse the noodles under cold water, rubbing off surface starch, then chill in ice water.
- Drain well and arrange on baskets or plates. Cut nori into thin strips.
- Serve with chilled tsuyu, sliced scallions, nori and wasabi to stir into the dipping cup.
