  • 6 oz dried soba noodles
  • 3/4 cup kombu dashi (vegan)
  • 2 1/2 tbsp soy sauce
  • 1 1/2 tbsp mirin
  • 2 scallions
  • 1 nori sheets
  • 1/2 tsp wasabi paste

  1. Simmer kombu dashi, soy sauce and mirin 3 minutes to make tsuyu, then chill in the fridge.
  2. Boil soba in plenty of water 4-5 minutes per package until just tender.
  3. Drain and rinse the noodles under cold water, rubbing off surface starch, then chill in ice water.
  4. Drain well and arrange on baskets or plates. Cut nori into thin strips.
  5. Serve with chilled tsuyu, sliced scallions, nori and wasabi to stir into the dipping cup.
