  • 3/4 cup mixed vegetables (carrot, peas, beans)
  • 1 small yellow onion
  • 3/4 tsp mustard seeds
  • 3/4 tbsp urad dal
  • 1 sprig curry leaves
  • 1 green chili
  • 1 1/4 tbsp ghee

  1. Dry-roast semolina in a pan over medium heat 3-4 minutes until fragrant; set aside.
  2. Heat ghee, temper mustard seeds and urad dal until golden, add curry leaves, chopped onion and green chili, cook 3 minutes.
  3. Add vegetables and cook 3 minutes, then pour in 2.5 cups hot water with salt and bring to a boil.
  4. Lower heat and stream in the roasted semolina while stirring to prevent lumps.
  5. Cover and cook 3 minutes until the water is absorbed and the upma is fluffy.
