Ingredients

scaled from 6 servings
  • 1/4 lb dried giant butter beans
  • 1 yellow onion
  • 1 garlic cloves
  • 1 (28 oz) can crushed tomatoes
  • 1 carrot
  • 1 3/4 tbsp olive oil
  • 1/4 tsp dried oregano
  • 1/4 cup fresh parsley

Method (tap to check — screen stays awake)

  1. Soak the beans overnight, or quick-soak: cover with water, boil 2 minutes, and rest off the heat 1 hour. Drain, then simmer in fresh water about 45 minutes until barely tender and drain again.
  2. While the beans simmer, saute diced onion, carrot, and garlic in olive oil until soft, about 8 minutes.
  3. Add crushed tomatoes and oregano and simmer 10 minutes.
  4. Fold in the beans with a splash of water and transfer to a baking dish.
  5. Drizzle with olive oil and bake at 375F for 45 minutes until the sauce thickens.
  6. Finish with chopped parsley and serve warm or at room temperature.
