- 3 dried red chilies
- 1/2 tsp Sichuan peppercorns
- 1/2 tbsp light soy sauce
- 1/2 tsp sugar
- 1 1/2 tbsp neutral oil

- Fry the beans in 2 tbsp oil over medium-high heat for 6 minutes, tossing, until the skins wrinkle and char in spots; remove.

- Add the ya cai, garlic, and ginger and stir-fry 2 minutes until dry and fragrant.
- Return the beans, add soy sauce and sugar, and toss 1 minute to coat.
