  • 3/4 tbsp Shaoxing wine

  1. Velvet the beef by tossing with cornstarch, 1 tbsp light soy, and a splash of water; rest 15 minutes.
  2. Gently separate the rice noodles by hand so they do not tear.
  3. Sear the beef in 2 tbsp oil in a screaming-hot wok for 1 minute until just browned, then remove.
  4. Add remaining oil, onion, and scallion whites and stir-fry 1 minute.
