- 3/4 lb fresh wide rice noodles (ho fun)
- 5 1/2 oz flank steak, thinly sliced
- 1 1/4 cups bean sprouts
- 3, cut into 2-inch lengths scallions
- 1, sliced yellow onion
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 3/4 tbsp cornstarch
- 2 tbsp neutral oil
- 3/4 tbsp Shaoxing wine

- Velvet the beef by tossing with cornstarch, 1 tbsp light soy, and a splash of water; rest 15 minutes.
- Gently separate the rice noodles by hand so they do not tear.
- Sear the beef in 2 tbsp oil in a screaming-hot wok for 1 minute until just browned, then remove.
- Add remaining oil, onion, and scallion whites and stir-fry 1 minute.
- Add the noodles and both soy sauces, tossing gently over high heat for 2 minutes so they char without breaking.
- Return the beef, add bean sprouts and Shaoxing wine, and toss 1 minute until sprouts just wilt.
