  • 1 1/2 oz fresh spinach
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 1 yellow onion
  • 1 celery stalks
  • 2 cups vegetable stock
  • 1/2 tbsp cajun seasoning
  • 3/4 cup long-grain white rice

  2. Strain, reserving the cooking liquid, and chop the greens finely.
  3. In the same pot, cook oil and flour into a brown roux, about 15 minutes.
  4. Add diced onion and celery and cook 6 minutes.
  5. Whisk in the reserved greens liquid and cajun seasoning, then add the chopped greens and simmer 15 minutes.
  6. Serve over white rice.
