- 1 green bell pepper
- 1 celery stalks

- 3/4 cup long-grain white rice

- Add diced onion, bell pepper, and celery to the roux and cook 6-8 minutes until softened.

- Add the chicken thighs and simmer uncovered 45 minutes, skimming fat off the top.
- Remove chicken, shred, and return to the pot. Simmer 10 more minutes and adjust seasoning.
- Meanwhile cook rice in 4 cups water 18 minutes until tender.
- Serve gumbo ladled over a scoop of white rice.
