  • 1/2 tbsp kosher salt
  • 1/2 cup barbecue sauce

  2. Mix the brown sugar, paprika, garlic powder and salt, and coat both racks.
  3. Smoke or bake at 275°F for 3 hours, spritzing with the vinegar every 45 minutes.
  4. Wrap in foil with a splash of vinegar and cook 1 hour more until tender.
  5. Unwrap, brush with barbecue sauce and cook 20 minutes to set the glaze.
  6. Rest 10 minutes, then cut between the bones.
