Ingredients
- 1/4 lb breakfast sausage
- 3 large eggs
- 2 flour tortillas, burrito size
- 1/2 cup shredded cheddar cheese
- 1 green bell pepper
- 1 yellow onion
- 1 optional jalapeno
- 1 tbsp light olive oil
- to taste salt and black pepper

- Brown the sausage in a dry pan over medium heat, breaking it up as it cooks. Lift it into a bowl and leave the rendered fat and browned bits in the pan.
- Dice the pepper, onion and jalapeno. Fry them in the same pan with a little light olive oil until softened and lightly coloured, then set aside in their own bowl.
- Scramble the eggs soft and set aside — they cook again inside the burrito, so stop while they still look underdone.
- Warm a tortilla in the microwave for 10 seconds. Longer than that and it stops folding cleanly.
- While it warms, heat 2 tbsp light olive oil in the same pan over medium to medium-low heat.
- Lay cheese on the tortilla first so it melts into everything, then add sausage, peppers and egg. Fold the sides in and roll it up.
- Set the burrito in the pan fold side down and fry 2 to 4 minutes, until the seam is sealed and the underside is deep golden. Turn once to colour the second face.
