- 2 oz Gruyere or provolone
- 1 1/2 tbsp unsalted butter
- 1/4 cup mayonnaise
- 1/2 tbsp Dijon mustard
- 1 cup arugula
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tbsp olive oil

- Spread the mustard mayonnaise on the toast, pile on the onions and steak, drape with cheese, and run the sandwiches back under the broiler for 90 seconds until the cheese slumps. Top with arugula and the board juices.
