- 3 oz diced ham
- 2 oz Swiss cheese, shredded
- 3 large eggs
- 3/4 cup whole milk
- 1/2 tbsp Dijon mustard
- 1 yellow onion
- 1/2 tbsp unsalted butter
- 1/4 tbsp fresh thyme
- 1/2 tsp kosher salt

- Cut the bread into 1-inch cubes, about 12 cups. If it is fresh rather than stale, dry it on a sheet pan at 300F for 12 minutes; fresh bread turns to paste in the custard.
