Ingredients
- 3/4 lb top sirloin steaks
- 1/2 tbsp finely ground coffee
- 1 tsp light brown sugar
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp kosher salt
- 1/2 tsp coarse black pepper
- 1 tbsp unsalted butter
- 1/2 tbsp neutral oil
- 2 large eggs
- 1 tbsp chives

- Pat the steaks very dry. Mix the coffee, brown sugar, paprika, garlic powder, salt and pepper and rub it over both sides, then leave them at room temperature 15 minutes.
- Heat the oil in a cast-iron skillet over medium-high until it shimmers and the first wisp of smoke appears.
- Sear the steaks 3 to 4 minutes per side. The sugar in the rub browns fast, so keep an eye on it; pull at 130 to 135F on an instant-read for medium.
- Add the butter in the last minute and spoon it over the steaks as they finish.
- Rest the steaks on a board 8 minutes. This is not optional; cut early and the juice ends up on the board.
- Fry the eggs in the same pan over medium about 4 minutes, spooning the pan fat over the tops, until the whites are fully set and the yolks are firm.
- Slice the steak against the grain, top each portion with an egg and the chives, and spoon over any resting juices.
