Ingredients

scaled from 4 servings
  • 2 kaiser rolls
  • 4 slices thick-cut bacon
  • 3 large eggs
  • 2 slices American cheese
  • 1 tbsp unsalted butter
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp hot sauce

Method (tap to check — screen stays awake)

  1. Lay the bacon in a cold 12-inch skillet, set over medium, and cook 8 to 10 minutes until crisp. Drain and pour off all but 1 tbsp of the fat.
  2. Split the rolls, butter the cut sides and toast them face-down in the same pan 2 minutes until gold. Set aside.
  3. Whisk the eggs with the salt and pepper. Melt the remaining butter over medium-low and add the eggs.
  4. Push the eggs from the edges to the middle with a spatula for 3 to 4 minutes until they are softly set with no runny liquid anywhere in the pan.
  5. Divide the eggs into 4 folded squares in the pan, lay a slice of cheese on each and cover for 30 seconds to melt.
  6. Build each roll with bacon, the egg-and-cheese square and a shake of hot sauce, and wrap in paper for 1 minute so it steams together the way a deli one does.
