  • 1/4 lb cremini mushrooms
  • 1 leeks
  • 1 celery stalks
  • 1 garlic cloves
  • 3/4 cup gluten-free chicken broth
  • 1/4 cup pecan halves
  • 1/4 cup dried cranberries
  • 1/2 tbsp fresh sage, chopped
  • 1/4 tbsp fresh thyme leaves
  • 1/2 tsp fresh rosemary, minced
  • 1 tbsp unsalted butter
  • 1 large eggs

  1. Simmer the wild rice blend in 3 1/2 cups of the broth, covered, 45 to 50 minutes, until the grains are tender and some of the wild rice has split open. Drain any excess and spread on a sheet pan to steam dry. Heat the oven to 375F.

  5. In a large bowl, combine the rice, mushroom mixture, pecans, and dried cranberries. Season with salt and pepper. Beat the eggs with the remaining 1/2 cup broth and fold through.
