Ingredients

scaled from 4 servings
  • 3/4 lb Lean ground beef
  • 1 medium head, about 2 lb Green cabbage
  • 1 medium Yellow onion
  • 1/2 tbsp Olive oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper
  • 1/2 tbsp Apple cider vinegar

Method (tap to check — screen stays awake)

  1. Cut the cabbage into thin strips about 1/4 inch wide, and dice the onion into 1/4-inch pieces.
  2. Heat the olive oil in a large 12-inch skillet over medium-high heat for about 1 minute, until it shimmers.
  3. Add the ground beef and onion. Cook for 7–9 minutes, breaking the beef into small pieces with a wooden spoon, until no pink remains and the onion looks translucent.
  4. Stir in the cabbage, garlic powder, salt, and pepper. Cook over medium heat for 10–12 minutes, stirring every 2 minutes, until the cabbage is softened and lightly browned at the edges.
  5. Pour in the vinegar and stir for 1 minute, scraping up any browned bits from the skillet; taste and add a little more salt if needed.
  6. Check that the beef has reached 160°F, then serve warm.
